Mums, Pumpkins, and Multi-Colored Leaves, Oh My!

Two days until Halloween! It is hard to fathom that October has flown by so fast. It won’t be long and Thanksgiving will be upon us.

The first thing I want to share is a recipe that was given to me nearly 40 years ago. It was 1979 and I was living in West Germany. (Yes, it was still divided then!) I lived in a little town called Kleingerau. It was right next door to a larger town called Grossgerau. (Klein means small in German and gross means big. I always thought that was sort of cute.)

One morning when I was taking my kids to the school bus stop, down the street and around the corner from my apartment, I met Deana. She had grown up in Oregon and I in Western New York. We became fast friends and in a way, our little overseas family.

We each had a different set of recipes that we were equipped with to face married life. In her kitchen I tried artichokes for the first time. (I really can’t figure out why I hadn’t had them before. My Dad was a produce man and we had tried every veggie known to man, at least I thought.) One of my favorite recipes that she gave me is a super easy peach cobbler. I made it not long ago and loved it as much as I did the first time. I texted her right away and told her I had just made it. We both wished we lived closer so we could share some with a cup of coffee!

Peach Cobbler

2 cups canned, sliced peaches (drained)

1 1/4 cup sugar

1 stick margarine

3/4 cup flour

2 tsp. baking powder

3/4 cup milk

pinch of salt

Mix peaches with 1/4 cup sugar. Put the margarine in a deep cake pan and set in 350 degree oven to melt. Stir the batter consisting of 1 cup sugar, flour, baking powder, pinch of salt and the milk. Pour in cake pan over melted butter. Do not stir. Put peaches on top and again, don’t stir.  Put into oven and bake for 1 hour or until top is golden brown. The batter rises to the top during baking and so does the butter which produces the golden brown crust.

*This recipe was given to me before the invention of microwave ovens. I melt the butter in a casserole dish in the microwave now instead of using the oven to do it. Either method works just fine.

Recently, we celebrated my twin grandchildren’s birthday. They are 19! Can someone please tell me how that happened?!! My granddaughter, Sierra, wanted an ice cream cake. She is my only granddaughter so naturally she gets what she wants. I have a super easy way to make one!

Ice Cream Sandwich Cake

1 jar of caramel sundae topping

16 ounce container of whipped topping

small bag of your favorite candy (I used peanut butter cups)

24 ice cream sandwiches

Using a 9″ X 13″ pan, unwrap half of the ice cream sandwiches and make a single layer on the bottom of the pan. You might need to cut one of the sandwiches to make the layer. Next, spread half of the whipped topping on top of the sandwiches. Then you liberally drizzle some of the sundae topping on top. Cut up some of your candy in smallish chunks and sprinkle on top. You will repeat the layers once more to make the cake. Put in freezer for a few hours or overnight. Make sure you cover it with foil so that it doesn’t absorb any odors. (For instance, I have green pepper frozen in my freezer and when I open the door that is all I can smell. You don’t want your ice cream to taste and smell like green peppers!)

As you can see I was beginning the process of making the second set of layers.

Voila! The finished product. Sierra loved it!

I was doing some research into foods that have an anti-inflammatory effect on our bodies. One of the recipes I found was a vegetable soup that sounded delicious! I tried it and it was sooooooooo good!

8 large green onions, chopped fine, including stalk

2 tablespoons olive oil

2 green peppers, seeded, cut into bite sized pieces

4 cloves roasted garlic, smashed

4 carrots, cleaned, cut into bite sized pieces

10 ounces mushrooms, cut into thick pieces

1 bunch celery, cut into bite sized pieces

1/2 head of cabbage, clean, and chop into bite sized pieces

2 cans diced tomatoes, with juice

48 ounces chicken or veggie broth

Salt and pepper to taste

Curry, to taste (optional)

In a large soup pot, put 2 tablespoons olive oil, add green onion and garlic, saute about 4 to 6 minutes until onion is clear. Add in the rest of the ingredients to the pot all at once. Add water until everything is covered with liquid, if needed. Cover and cook on low heat for about two hours. Season to taste.

As you can see, there are a lot of good-for- you veggies in this recipe. The one thing I did to change it up was to saute the green onion and garlic in a saute pan and then put them in my slow cooker with the other ingredients. I put it on low and let it cook away all day until the veggies were nicely cooked.  The next time I make it I might add another can of tomatoes to the recipe. I really like the tomato flavor highlighted in my foods.

Hacks and All That Jazz!

  • I have had acrylic nails put on for many years. I decided about 3 weeks ago to stop, at least for a while. My nails have always been thing and now that the acrylic is off they are dry and peeling. I was doing some investigation online and found a way to fix it. You put some olive oil in a dish that you will be able to dip your finger tips into. Then warm it for 35 to 45 seconds in the microwave. It is recommended that you soak your finger tips for 15 to 30 minutes. I really have a hard time sitting still so I am doing 15 minutes for each hand once a week while I watch tv. It has helped tremendously. If I had the patience I would do it twice a week until I get on track. If you have dry and peeling nails I would highly recommend this treatment.
  • If you are baking something that requires chocolate chips or any other flavor you should toss them in flour which will keep them from sinking to the bottom.
  • If you have leftover cake you should put a slice of bread at cut end and it will keep the cake fresh.
  • In an effort to keep my chest freezer organized I developed a method using those reusable shopping bags. In one bag I put all of my poultry. Another holds all of my beef and so on. It really is helpful for me so that I can easily find what I need and also tell what I am running low on.
  • Did you know that sticking with the same doctor for many years may increase the length of your life? Linked with this is greater patient satisfaction, fewer ER visits and better adherence to medication. In other words, if you see a doctor who has the big picture of you and your health and then a  specialist when needed your health and ultimately your length of life is better.
  • Along the same vein, keeping your teeth healthy has a lot of benefits linked to it. These are a stronger heart, lower cancer risk, lower blood sugar, clearer lungs and a sharper brain. So the moral of this is find a good dentist and brush your teeth (and your tongue) twice a day for at least 2 minutes.

April 17 = Snow?

Happy Tuesday everyone! I hope your last week has been a good one.

I had an excellent one! I made a trip to Ithaca and saw my son and his band play with my oldest daughter. She and I don’t get to do a lot together since life is so busy but we had some quality time on our road trip! I also found a real steal on a gathering set for my dining room (at the Christmas Tree Shop, can you believe it?!).  It was delivered last Friday and it is in use now. My house is clean with shiny floors and empty laundry hampers. Darn! I feel accomplished. In truth, if we weren’t having snowy weather I may not have been so ambitious in my house. There, who would have known that Winter in April could be a good thing!

Recipe

My daughter Sara made an ice cream cake to celebrate her fiance’s birthday. It turned out awesome! Her creations always do. She never follows a recipe. Sara has enough knowledge of food and flavor that she just creates! This example is just a small sample of her work.

Ice Cream Layer Cake

Ingredients

butter flavor cooking spray

10-12 ice cream sandwiches

1 quart of ice cream – softened (Sara used Eddy’s Double Chocolate Fudge Brownie)

Chips Ahoy cookies (or a store brand)

1 jar of hot fudge topping

Approximately 2 cups of Peter Pan honey roast peanut butter

1 – 8oz. container of whipped topping

Mini-chocolate chips/morsels

Spray a rectangular container with the cooking spray. Line the bottom completely with the ice cream sandwiches. You may have to cut some to do this. Next, spread the softened ice cream on top of the sandwiches. Now it is time for the cookie layer. Warm the hot fudge topping in the microwave for long enough to make it pour-able but be careful and don’t warm it too much. Drizzle it on top of the cookies and using a rubber spatula spread it out gently. Then do the same warming, drizzling and spreading with the peanut butter. Finally top with a layer of whipped topping and sprinkle mini-chocolate chips on the top.

Project 

A few nights ago I went to the Dollar Tree store and picked up some items for a Spring wreath for my porch (ok, among some other things). All of the items only cost $5 plus tax. I used my hot glue gun to put it all together. See what you think.

  

Handy Tips

  • When I paint a room or a small project one of the challenges I face is to keep the paint container reasonably clean so that closing it is easier. I can’t tell you how many times when closing up the paint can I splattered myself with paint from the little well around the rim of the can. I would wipe it but still there might be a mess. There is also the way that paint will run down the side of the can when you are pulling the paintbrush from the can and clearing off the one side. Maybe I am the only one this is happened to but I doubt it.

Today when I was painting a small folding table with chalk paint for a little display I tried a new trick. I put a rubber-band around the container stretching from top to bottom. You can use this on a larger gallon can as well. You will just need a longer rubber-band. Then you use the rubber-band to run your brush across as you pull it out of the container to paint. It works like a charm!

  

  • Tennis balls are relatively cheap and can be used for a few different jobs. You might want to invest in a few when you read these tips.

  1. You can cut a slit in as many tennis balls as you need and put the balls on the furniture legs to prevent scratching and provide for quiet easy sliding when moving furniture/
  2. Tennis balls also remove scuff marks on wood floors by rubbing the scuffs with a clean tennis ball.
  3. If you use a padlock outdoors and would like to prevent it from getting rusty and corroded you can cut a slit in a tennis ball and put it over the lock.
  4. If you have to park a bicycle on grass it is sometimes not very stable. Cut a slit in a tennis ball and put it on the bottom of the kickstand. Problem solved!

Potpourri

Hello! We had an unseasonably warm few days and some sunshine in my neck of the woods but Winter has returned.

We had our monster birthday bash on Sunday. My oldest daughter’s birthday was January 3 and my twin sons had their special day on January 25. My compadre in crime, Linda, celebrated on January 26. We rolled all those birthdays into one and had a party.

As I mentioned in a previous post,  each celebrant picks their own treat. Therefore, it was a busy day for me in the kitchen. Melanie picked angel food cakes, as she always does, with the fluffy cooked frosting. I say cakes because she always expects at least 2 cakes. One year she request three!! She likes the leftovers. Josh selected baked New York style cheesecake. I chose an easier recipe than the one I usually use. He liked it but told me he likes the old recipe better. Although everyone enjoyed the cheesecake. Jacob wanted an ice cream cake. Linda wanted Rick Krispie treats. I will share recipes below. Well, except for the angel food cake. I buy mixes for those. I’m not nuts enough to make those homemade. Well, at least not yet! Oh, and everyone knows how to make Rice Krispie treats. The only thing I did differently was to cut the treats up and stack them like a layer cake.

Money Savers

  1. Save your wrappers from butter and margarine in a container in the frig. Whenever you need to grease a pan just use the wrapper. Rub it around the pan using the side that was next to the butter or margarine. My Mom always did this and I started right off the bat when I had my own home!
  2. I get many things in the mail that have an envelope enclosed that I don’t use. I save those envelopes and use them rather than purchasing envelopes.I use them to do night deposits at the bank and pay the in town bills that I just drop off. Basically anytime I need an envelope for something and it doesn’t matter what kind of envelope I use.
  3. When you are making something that only requires egg whites save the yolks. Put them into a pan of boiling water and cook them until they are no longer runny. Cool. Crumble them for salads.
  4. If you need a knife or pair of scissors sharpened and don’t own a knife sharpener you can still get the job done. Turn a ceramic mug upside down. There is almost always an un-glazed ring around the bottom. Hold your knife blade at a 45 degree angle against the ring and pull it firmly along the ceramic edge from base to tip a few times on each side.
  5. Here’s another tip for eggs. You can freeze them! Of course you have to take them out of the shell first. Crack 2 eggs at a time in a bowl. Beat them until well blended. Freeze them in muffin tins. Once frozen, remove them from the tin and store in a freezer bag in the freezer. Each time a recipe calls for 2 eggs get your bag out and you will be able to select a perfect portion. If you have a recipe you use frequently for say 3 eggs, you can do those too.
  6. Muffin tins can be used for many things. If you turn a muffin pan upside down you can use it to bake tortillas for tacos or edible bowls for salads.

 

     

Have you ever had or do you currently have a cupboard that is difficult to get to? I do! It is right beside my stove and I keep spices and other related things in there. It is just a little too high for me to be able to see things in it. I have tried those spice shelves made out of bamboo that have steps and that didn’t work for me to see into the cupboard. I tried long skinny plastic containers that would hold a row of spice jars. That didn’t work that well either. The other day I had an epiphany! I needed a tray or container that would hold many things from the cupboard so that I could simply pull it out and see everything. Luckily I collect tins from various products. My daughter gave me two Moon Pie tins filled with, what else?, Moon Pies! The Moon Pies are long gone but the tins were here.

My friend Linda decided she needed to make a lighted fabric garland for Valentine’s Day. She shared the thought with me and we were both off and running! I am a little obsessive so I must have one for each holiday that I am decorating my antique Hoosier cabinet with.

We cut fabric strips in the colors of whatever holiday we were working on. The strips of fabric were roughly 5 to 6 inches long and about and inch to an inch and a half wide. We both were able to find or collect fabric scraps that we could use for the project. However, when we did need certain colors we bought quilting squares for 94 cents at Walmart in the colors we needed.  I used pinking shearers for mine. Linda simply tore some of her strips. You can also use regular shearers. It is all up to you and the look you want to have. Then you simply tie the strips onto the a light cord. We used discounted 20 light strings that we bought after Christmas for 47 cents each!

Recipes

Cooked Frosting

 

  • 5 Tablespoons flour
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1 cup butter (2 sticks), room temperature 
  • 1 cup granulated white sugar

 

  • In a small saucepan, whisk flour into milk and heat, stirring constantly, until it thickens. This might take 5 minutes, give or take.  Keep stirring so as not to burn the mixture.  Remove from heat and let it cool to room temperature. Add the vanilla.
  • While the mixture is cooling, cream the butter and sugar together until light and fluffy. Then add the cooled mixture from step 1 and beat until it all combines and looks like whipped cream. Scrape the sides of the bowl so that you are sure to incorporate everything.

 

Easy Baked Cheesecake

  • 2 (8 oz.) cream cheese, softened
  • 2/3 cup sugar
  • 3 large eggs, whisked
  • 2 tsp. vanilla
  • graham cracker crust
  1. Beat cream cheese, sugar, eggs, and vanilla with mixer until smooth.
  2. Pour into a ready graham cracker pie crust.
  3. Bake 20 to 25 minutes at 350F.
  4. Remove cheesecake and cool for 5 minutes.
  5. Cool and refrigerate.
  6. Serve cold!

This recipe was saved from simple.net.

Notes: I had to leave it in the oven the full 25 minutes. I then turned the oven off and allowed it to cool in the oven and then refrigerated it. Allowing a cheesecake to cool in the oven is a normal practice. I used a spring form pan for the cheesecake and made my own grahan cracker crust using graham cracker crumbs, sugar and melted butter.

Ice Cream Cake

1 brownie mix baked as directed

1 half gallon of ice cream (softened)

1 tub of pre-made frosting

8 oz. container of whipped topping

sprinkles

I baked the brownies in a 9 X 11 pan as per directions. Once the brownies cooled I spread the frosting on top. The next layer is the softened ice cream. To top it off you spread the whipped topping on and decorate with sprinkles. The ice cream and frosting flavor are up to you. I used chocolate frosting and fudge ripple ice cream. Cover with plastic wrap (I always use Press and Seal. It is the best!) and store in freezer until serving.
