Is it Really Time for Pumpkin Spice Everything Already?!

Yep, I did some shopping yesterday. I saw Pumpkin Spice cereal, candy, cookies, coffee, soup. You name it, I saw it! I mean, I like pumpkin, but not in August and I could totally live without the spice part!

Anyway, I have some Fall (and some others) crafts to share because I am ready for that! Let’s start with my recipes and get this post started! (Did you just hear Pink singing Let’s Get This Party Started or was it only me?)

Recipes

Fresh Corn on the Cob Soup (I know this sounds fall-ish but it is corn season,)

3 to 4 cups of corn removed from the cob 4 medium potatoes, cubed 2 large carrots, sliced 2 large stalks of celery, sliced 1 medium onion chopped 1 teaspoon ground thyme 1 quart corn broth 1 quart vegetable broth salt and pepper to taste

I put all of this into a crockpot and cooked it on low until all the vegetables were cooked. Then I used an immersion blender to make it a little more creamy but still chunky. You can use all vegetable broth or all chicken broth. Really any combination you have will work. I had made the corn broth by boiling the cobs in water after I removed the corn. I am not giving credit for this recipe to anyone because I made it up myself. I loved it and the people who I served it to gave really good reports!

Stuffed Waffles

I bought a stuffed waffle maker as I mentioned in my last post. Finally, I tried it! I stuffed the waffle with scrambled eggs, bacon bits and cheddar cheese. It was delish and also very filling. You could stuff them with fruit, chocolate, peanut butter, and really anything you can think of! You will need the special waffle maker.

Stuffed Tomatoes

It is also tomato season. I stuffed my tomato with tuna salad but you could use chicken salad, cottage cheese and maybe other things. I found the best way to stuff the tomato is really to take out as much as you can of the seeds, etc.

Tortilla Bowls (steamykitchen.com)

I used an oven safe bowl that would accommodate the tortilla. I preheated the oven to 325 degrees. Before putting the tortilla in the bowl I sprayed both sides with cooking spray. When you put the tortilla in the bowl you will naturally have all those little folds. Bake in the oven for 6 to 8 minutes or until bowl is browned and crunchy.

Let’s Get Crafty!

Spooky Skeleton Bottle

You have to use what you have, right? So, I had a wine bottle that had a skull on it. ( I love me some sugar skulls or really any skull.) I added fairy lights and instant Halloween decor.

Bones in a Specimen Jar

I used a smaller size canning jar to which I added water with neon green food coloring. Now, here is my first Dollar Tree reference. Finally, I added bones from DT. I am debating how I did the covering on the lid. I may do something else. If you have any ideas leave them in the comments.

Watering Can

I had several watering cans that I used at one time for a decoration for my front steps. They were all painted black and orange. For this project I repainted one a turquoise color. I suspended fairy lights from the spout and hung it on a small shepard’s hook.

Light Globe Ghost

While thrifting with a friend I found a light globe from a ceiling fan. It was just what I needed to try and make a cute little ghosty! I added some ribbons and eyes, viola!

Serving Tray

For this project I used a 12 inch in diameter wooden disk that was a half inch thick. First, I painted it white and after it dried completely it was given a light sanding. Next, I separated the top ply of a watermelon napkin from DT. Using Mod Podge I coated the top side and edges of the disk. Then the napkin was laid down and I used a brayer and plastic wrap to smooth out the napkin on the tray and down the sides of the disk. A coat of Mod Podge was then put on top of the napkin. When everything was dry I used E6000 and a little hot glue to attach spoons that had been bent for handles to opposite sides of the tray.

Thrifted Bird Bath

I have wanted a bird bath and have seen ideas on how to make your own. I started looking for vintage glassware. For the base I found a divided serving tray with a well in the center for a bowl of dip. It cost $2.99. It was harder to find the vases for the stem that would match up for gluing. DT to the rescue. I bought 2 vases for $6.(So, the bird bath was not totally thrifted really but close.) . There was a little more hunting involved to find a large shallow serving bowl for the actual bath portion. I finally found it at Savers for $3.99. Again I used E6000 to glue the pieces together. I let each section cure for 24 hours before the next section was added. The height of the bird bath is approximately 2.5 feet +. The whole project cost me $13.

Sunflower Screen

At the end of a friend’s yardsale a few years ago I was given a couple of old screen doors. I used one to paint a sunflower on. If you try this do make sure you use a stiff bristle brush as it can better with stand the grating of the screen. The door was originally white and I painted it green. It made the flower stand out more. It is now hanging on my front porch.

Hacking It

*This may not really be a hack but I am sharing it here anyway. I recently learned about a website for exchanging postcards. I collect them so it was right up my alley. I registered on the site and was given a name and address for a lady in Hong Kong. You are also given a postcard ID number which you put on the postcard along with your message. When this lady receives the postcard she will post that using the ID on the website. I will also be getting cards from people by the same process. If this sounds like fun to you, the website is postcrossing.com. I will let you know in my posts when I start getting postcards. By the way, an international stamp costs $1.65.

*Need a home improvement project done inside your house? Contractors are less busy in the Winter and are more likely to give you their full attention and a better deal during the cold weather.

*Everyone seems to know that matinees at the movie are a cheaper way to go but also check to see if any movie theaters near you offer midweek evening specials too. A Tuesday or a Wednesday often is less busy and movie theaters give deals to draw in customers.

*Restaurants often offer more food at a cheaper price for lunch. Pro tip: order at lunch time and take home for dinner.

*Keep track of National Food Holidays! Whether it is National Pizza Day or National Coffee day, you might find deals or even freebies at various restaurants. This past pi day I had a deal at local convenience store to get two slices for $3.14. Check this website to stay in the know, http://NationalDayCalendar.com.

Direct From the County Fair

Recipes

Turkey Burgers (healthyrecipesblog.com)

▢1 lb. ground turkey ▢1 tablespoon mayonnaise (I use avocado oil mayonnaise) ▢1 tablespoon Dijon mustard ▢1 teaspoon kosher salt ▢¼ teaspoon black pepper ▢1 teaspoon garlic powder ▢1 teaspoon onion powder ▢1 teaspoon smoked paprika ▢½ cup fresh parsley chopped ▢4 tablespoons olive oil for frying*

  • In a medium bowl, mix together the ground turkey, mayonnaise, Dijon mustard, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and chopped parsley.
  • With moist hands for easier handling, form the mixture into four ½-inch-thick patties.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the patties and cook until golden brown and cooked through, about 5 minutes per side. Serve immediately.

*These burgers were heavenly. I am sure they would be just as good done with ground chicken.

Double Chocolate Zucchini Bread (manilaspoon.com)

  • 1½ cups all-purpose Flour
  • ¼ cup unsweetened Cocoa or Cacao powder
  • 1 tsp baking soda
  • ½ tsp baking Powder
  • ½ tsp salt
  • 2 large eggs
  • 1½ cups zucchini, shredded/grated
  • 1 cup sugar (white)
  • ½ cup vegetable or any neutral-flavored oil*
  • 1 tsp vanilla extract
  • 1 cup chocolate chips or chunks (rolled/coated in 2 Tablespoons Flour) plus extra to add on top
  1. Preheat the oven to 350F. Lightly grease (or butter) a loaf pan.Whisk together the flour, cocoa powder, baking soda, baking powder and salt. Set aside.
  2. In a separate bowl, lightly beat the eggs. Add the zucchini, sugar, oil, and vanilla extract and beat until smooth.Pour the wet ingredients into the dry ingredients and mix just until combined.
  3. Fold in the chocolate chips (including the extra flour with it). Transfer to the prepared loaf pan. Top with extra chocolate chips (optional but makes this bread even yummier!)Bake in the preheated oven for about 50-60 minutes or until a tester inserted in the middle comes out clean.
  4. Let cool in the pan for about 10 minutes and then transfer to a wire rack to cool completely.

Crockpot Dorito Casserole (recipesthatcrock.com)

  • 1 lb ground beef cooked and drained
  • 1 oz pkt taco seasoning
  • 1/2 cup water
  • 13.5 oz can cheddar cheese soup
  • 16 oz can refried beans
  • 15.25 oz can black beans drained
  • 2 cups shredded cheddar cheese
  • 1 bag Doritos
  • Mix together your water and taco seasoning
  • Mix your taco seasoning mixture with your prepared ground beef, set aside
  • In a separate large bowl, mix together your soup, refried beans and black beans (drained)
  • Add ground beef mixture to bean mixture and stir until well combined
  • Spread out in a lightly greased casserole crock pot or 6-quart slow cooker
  • Sprinkle cheese on top evenly
  • Cover and cook on low for 4 hours or high for 2 hours
  • Remove your crock from heating unit and let rest for 30 minutes
  • Sprinkle crumbled Doritos on top right before serving

Enchillada Casserole

1 pound ground beef, turkey or chicken 1 pkg. taco seasoning 1 pkg. of corn tortillas 2 cans of red enchillada sauce 1 bag of shredded cheddar cheese 1 16oz. can of refried beans

Brown your meat and add the seasoning. In a 9×13 pan pour some red sauce and spread out. Layer tortillas by overlapping a little. Then more red sauce and spread out. Layer meat, then refried beans and cheddar cheese. Repeat as necessary. Bake in a 375 degree oven and bake for 35 minutes. Yum!!!

Crafts

Solar Lights

At my favorite store, Dollar Tree ($1.25 Tree), I picked up some solar lights and vases. You could also use jars. I pulled the light off the stake and put it in the vase. I tried some with with stones in it and without. Which do you like better? These would be nice for a table at a party or on your patio.

Shell Trinket Dish

I had purchased a bag of big shells from the craft section of a thrift store thinking that I would find a use for them and look below! I decoupaged the top printed layer of a beautiful napkin onto the inside of the shell and put a top coat of Mod Podge on it. Once that was dry I edged it with metalic gold paint. It measures approximately 5″X6″ and works perfectly for a trinket/ring dish. Bonus is that it is sooooooooo pretty!

Hacks

  • Do you hate when the McDonald’s ice cream machine is on the fritz? Go on McBroken.com. You will see an interactive map of every McDonald’s in your area and the real time status of their ice cream machine.
  • Need to find the wifi quickly? Download the app, wifi map. This will show a map with wifi locations and their passwords. Want to know what else is cool? The app doesn’t need wifi to run.
  • Want to help out the bees this summer? Hang a wet towel outside during a heatwave. This will provide a much needed water source for thee bees.
  • If you use puppy training pads it is much cheaper to buy incontinence pads designed for humans. These are cheaper, better quality and come in larger packages.
  • Going to the beach? Put your cell phone in a ziplock sandwich bag. It won’t get wet or sandy and you can still use the touch screen.

Let The Sun Shine In

Wow! The sunshine just seems to energize me and I bet it does you also! I have been crafting, cooking and trying new tricks that I am excited to share with you. So, let’s not waste anymore time and get right to it.

Recipes

I just want to put it out there that I never share a recipe I have found without trying it myself. Tried, tested and Beckie approved!

Peanut Butter Frosting (recipegirl.com)

  • 3/4 cup (1½ sticks) butter, at room temperature
  • 1½ cups creamy peanut butter (do not use natural)
  • 1/4 cup milk (or a little more, as needed)
  • 3 cups powdered sugar
  • In a large bowl, use an electric mixer to combine the butter and peanut butter. Beat until smooth and well-combined. Mix in 1/4 cup milk, then add in the sugar a little at a time until it is all mixed in. Sprinkle in a little more milk, if needed, and continue to beat until the frosting is a good spreading consistency. It should be creamy and delicious!
  • You can use this recipe to frost either a two-layer cake or 24 cupcakes.

Peanut butter frosting was my Mom’s favorite and she always requested it for her birthday cake. Unlike a lot of people who like PB frosting with chocolate cake she always wanted it with yellow cake as that is what her mother made for her when she was little.

Pineapple Angel Food Cake (ruthieskoziblogspot.com)

This cake is so simple, so refreshing! You will absolutely love it!

Ingredients:

  • 1 box angel food cake mix
  • 1 15 1/2 oz. can crushed pineapple (with juice)

Directions:

  1. Combine cake mix and canned pineapple, pour in ungreased 9×13 glass dish.
  2. Bake in a preheated 350 degree oven for 25-30 minutes.

Cube Steak and Gravy in the Crockpot (thecountrycook.net)

  • 1 packet of au jus gravy mix
  • 1 can cream of chicken soup
  • 1 can French onion soup
  • 1/2 cup water
  • 1 ½-2 pounds cube steak
  • 3 tbsp cornstarch
  • 3 tbsp cold water
  • In the bottom of a 6-quart slow cooker, combine cream of chicken soup, French Onion soup, packet of au jus and water.
  • Stir well.
  • Put cubed steak in slow cooker with gravy mixture.
  • Cover slow cooker and cook steak on low for 6-8 hours.
  • After cooking, it’s time to thicken gravy. In a small bowl, whisk together cornstarch and cold water. Stir mixture into crock pot.
  • Turn the setting to high and cook for 30 minutes (until gravy is thickened

Jazzing Up Your Canned Refried Beans

We all know that canned refried beans lack that certain deliciousness that you find in a Mexican restaurant. I stumbled on a way to make them more restaurantish! Just add some sour cream, a dash of hot sauce and some shredded cheddar! These add ons are to your taste so just give it a try!

Pecan Praline Monkey Bread (melissassouthernstylekitchen.com)

  • 1 cup pecan pieces toasted & divided
  • 20 frozen yeast rolls thawed & quartered [I used Rhodes]
  • â…” cup granulated sugar
  • 1 Tbsp ground cinnamon
  • 1 cup packed light brown sugar
  • ¾ cup butter
  • â…“ cup heavy cream
  • 2 tsp pure vanilla or rum extract
  • sea salt optional
  • Prior to preparing: Place the frozen yeast rolls in a single layer on a platter, and thaw on the counter for 30 minutes. If the rolls are slightly frozen in the middle, they’re much easier to quarter. Use a sharp knife and quarter each roll.
  • Toast the pecans: Preheat the oven to 350 °F. Spread the pecan pieces in a single layer on a baking sheet and toast for 6-8 minutes. Cool completely
  • To assemble: Spritz a tube pan with cooking spray. [The rolls will rise while baking. A Bundt pan is not quite deep enough for this monkey bread]
  • Mix together â…” cup of granulated sugar and 1 Tbsp of ground cinnamon.
  • Toss with the quartered rolls in a large plastic storage bag until evenly coated.
  • Sprinkle â…“ of the toasted pecans on the bottom of the tube pan.
  • Layer half of the quartered rolls on top of the pecans in the pan.
  • Sprinkle the first layer of rolls with â…“ of the remaining pecan pieces.
  • Layer the remaining quartered rolls on top.
  • Sprinkle any leftover cinnamon and sugar over all.
  • Top with the last â…“ cup of toasted pecan pieces.
  • On the stove top, melt the brown sugar, butter and heavy cream together over medium-high heat. Bring to a boil, stirring constantly. Cook for 1 minute.
  • Remove from the heat and stir in the vanilla or rum extract. The mixture will be hot, handle carefully.
  • Pour evenly over the rolls in the pan. Cover with a damp cloth and allow to rise for 45 minutes.
  • Bake at 350 °F for 35-40 minutes until golden. Rest for 5-10 minutes before carefully inverting onto a platter.
  • All of the gooey praline sauce will drizzle down the sides. Sprinkle the top with sea salt.
  • Pull apart and enjoy!

DIY/ Crafts

This is just a simple little trick to jazz up a spot in a room. Just measure your light switch cover and find a photo frame that will fit around it. I bought mine at the Dollar Tree so not much of an investment for this project. The one I bought happened to have a little name plate so I put one of my Mom’s favorite quotes in there. Let me know what you think.

Many people are making vertical signs for their entrance on wood. I decided to give it a try. I sanded a plank and painted it with a green that I had on hand. I then used my Cricut to cut out letters spelling “HOME”. I measured the board and the letters and marked placement for the letters on the board. While I had my Cricut out I printed a border of coffee cups to use to embellish my sign. I placed the border below the letter “E”. I used jute rope I had and a hot glue gun to affix the rope inside the letter “O”. I added a piece of the rope at the top of the plank as well. My final touch was to use E6000 and a little hot glue to mount a plain white coffee cup at the bottom to which I had add some nice summery flowers. I kind of like my first attempt. What do you think? *Using the hot glue holds the item you’re gluing while the E6000 cures.

A couple of years ago I purchased a Singer treadle sewing machine stand from an antique shop. It came with a piece of wood attached to the top so you could use it as a table. I never cared for the wood as it looked like an open grid. I was trying to find some reclaimed wood I could use instead. I puzzled over this a long time until I had a thought and ran to my basement. Sure enough, some wood with numbers and symbols on it which came from a closed factory was there. I used my electric saw to cut 5 pieces the length I needed and then used screws to anchor them in a row on the base. I sanded the cut edges and applied some poly and viola!

I have been busy making decoupaged little cutting boards with cute napkins. I use a Dollar Tree square or round cutting board (only $1 of course), a cute napkin, waterproof decoupage, a paintbrush, plastic wrap and a brayer or other object (your hand) to smooth out the wet napkin. First you take the little plastic legs off the cutting board with a spatula or knife. Then you clean any sticky residue off. Using your paintbrush you spread the decoupage liquid evenly over the back side of the cutting board. You then need to separate the plies of the napkin. If you have a 3 ply napkin you will have to remove the back two plain layers. You want just the printed top ply by itself. Once you have that then you lay it printed side down carefully on the wet side of the cutting board and put a sheet of plastic wrap down over it as a barrier. Using your brayer or other item smooth out the napkin. Allow this to dry and then gently put another layer of the decoupage on top of your napkin as a sealer. Allow this to thoroughly dry. Then using a sanding block or small piece of sandpaper, over over just the very edge of the cutting board to clear off any excess napkin. *Here’s a little tip for separating the plies of a napkin. Use your finger nail or a credit card to gently over over the corner of the opened napkin several times. It flattens those little nubs out so that you can gently and easily pull apart the plies.

Dollar Tree (my preferred store! LOL) had some patriotic paper straws. My friend, Shelly, and I spotted them and immediately went to Pinterest to see what we could do with them. We found this sweet little flag that you can make with the straws, some jute or other cord and glue. We chose to put ours on a piece of poster board as a backing. Cute, right?

Finally, another little Beckie and Shelly thing. We cut strips of felt in red, white and blue. Then tied them to jute or other cord as a garland. The felt was only 33 cents a sheet and we used 6 sheets of each color. The cord/jute we each had on hand. It spices up my archway nicely.

Just realized I should have straightened my tablecloth but at least you know I am not perfect. Right?

Hackin’ Away

*Have you ever had cookies, brownies, etc. get hard on you even if they have been covered? My trick to freshen them up is to put them in a ziplock bag and sprinkle a small amount of water in. Then you zip the bag up and let it sit for a few hours. Soft again!

*In the evening I brew some tea. Quite often there is a little left in the pot that doesn’t get used. I put that into an ice cube tray and use them for my iced tea. It really makes a difference in the iced tea since it doesn’t get watered down with regular ice. You can do the same thing with leftover coffee and use it for your iced coffee.

* I recently put a little slit in a window screen. I was really bummed since they are new screens. However, I remembered the clear nail polish trick. Just brush a small amount of the clear polish on the screen to seal the area and it is hardly noticeable.

*Don’t put any other paper product but toilet paper down your toilet. Toilet paper is made to break down super easy and facial tissue, napkins, etc. are not and could cause you problems.

*I shared with you before how I use my lint roller to clean my lampshades of the dust they accumulate. I also have another use for the trusty lint roller. I always use a tablecloth and they can get crumbs on them very easily. Instead of unloading my table to shake the cloth I simply go over the areas with my lint roller. Quick fix!

*You know how you get those plastic straps around boxes for shipping? I had always ran for my scissors to cut them and then found out that they have a tab to just peel and open. If you just look you will find it.

Right here —

*In the summer I like to put my mayo in a squeeze bottle like I do my catsup and mustard. There is an easy way to fill it even with mayo! Just use a plastic storage bag. Put the mayo in the bag, seal it, cut off a little piece of one of the bottom corners. You can then use it like a pastry bag to fill the bottle.
